THE ART OF THE PERFECT SERVE

THE ART OF THE PERFECT SERVE

Our cocktails were developed to reflect the many moods of the Okavango Delta; its brightness and heat, its abundance and wildness, its moments of play and its deeper, more contemplative stillness. Each begins with The Sentinel, then builds a different expression of place through ingredients such as citrus, berries, cucumber, honey, wild sage, apricot and smoke. We have mastered the art of the perfect serve, if we don’t say so ourselves!

The Okavango Sunset captures the vivid colour of day’s end. The Bush Bramble pays tribute to the abundance of wild berries, reimagining the easy pleasure of a daiquiri through the botanicals of the bush. The African Bees Knees brings together honey and citrus, while the Camp Fire moves into something warmer and smokier; made for the hour when darkness settles around the flames. Please check out our signature cocktails here, for your abundant use during the summer seasons ahead.

So, the perfect serve begins long before the first sip. It begins with the decision to stop, and to put aside whatever comes next. To give your attention to the glass before you and the person, place or moment with which you are about to share it.

For the purposes of foundational teaching, let’s start with the classic G&T.

Begin with a balloon glass and fill it generously with ice. Stir slowly until the glass begins to carry the coolness in your hand.

Then, The Sentinel.

Pour 50 ml over the ice and pause. Notice its fresh, citrus-scented juniper nose and the deeper, resinous green notes beneath it; a character shaped by wild-harvested mopane and botanicals, and by water that has travelled a thousand miles before reaching the Okavango Delta. This is the foundation of the serve, and the reason everything that follows should be done with restraint.

Add a premium Indian tonic gently, pouring it down the back of a bar spoon to preserve its bubbles. There is no need to hurry or fill the silence, as part of the pleasure lies in the making; the effervescence in the meeting of gin and tonic and the first trace of citrus released into the air. Stir once.

Finish with squeezed orange zest to awaken The Sentinel’s citrus notes, or add a slice of ruby grapefruit for something gently bittersweet. The garnish should reveal another part of the gin, as the perfect accompaniment.

And then comes the most important instruction of all: Slow down.

The art of the perfect serve is the art of attention. The perfect serve always returns us to the essence: gin, tonic, ice and citrus. Four simple elements brought together with intention.

This is our invitation to resist excess, and to pour slowly — to preserve the bubbles. To choose a garnish according to the season. And, notice the changing light while the glass grows cold in your hand.

The perfect serve is the drink in your hand, and it is where you are, who you are with, and what the day has held. The conversation that begins after the first sip, or the silence that does not need to be filled.

Fill the glass with ice. Pour The Sentinel. Add tonic gently. Stir once. Garnish.

Then let the world wait. Welcome to mastery.
